Crustless Spinach Quiche and Whole Wheat Bread ($10 Family Dinner Idea)

Crustless Quiche is one of the easiest recipes ever! You can customize it to suit your family’s preferences (and based on what leftovers you need to use). You can combine vegetables (think chopped broccoli, mushrooms, roasted peppers and onions, etc.) and use any type of cooked meat you like (sausage, turkey, etc).

Shredded cheese is a wonderful addition (just throw in a cup before you bake it)but we have new found dairy products in my house, so I chose to skip that.

This simple whole wheat bread recipe has been my go-to recipe for years when I want to make something healthy but with minimal ingredients and prep time. Corner so It’s easy – the bread machine does all the work! I mill my flour (I use organic white winter wheat) but you can use any combination of white/whole wheat flour. I use 8×4 pans to get nice, round loaves. Mix the warm pieces with butter once yum!

  • 1/2 lb ground beef, or meat of choice (Aldi – $3.99 for 16oz) $2
  • 1-2 cups chopped fresh spinach (Aldi – $1.99 for 8oz) $1
  • Salt, pepper, Italian seasoning
  • 1 cup and 1 Tablespoon of warm water
  • 1 tablespoon of coconut oil (Aldi – $5.49 for 14oz) $0.19
  • 1 tablespoon of olive oil (Aldi – $7.25 for 33 tablespoons) $0.22
  • 2 spoons of honey (Aldi – $4.99 for 24oz) $0.20
  • 3 cups whole wheat flour (Lidl – $2.99 ​​for 18.75 cups) $0.48
  • 1 tablespoon instant active dry yeast (Sams – $6.88 for 2lbs) $0.08

Dinner Total: $6.42 (Serves 6)

*Note: I have found some of these items cheaper than the listed prices using coupons or coupons. This is why you will see Nellie’s eggs instead of Aldi brand eggs in the picture, etc. But since not everyone can afford the same low prices, I used average grocery store prices when calculating my total dinner cost.

How to Make Perfect Spinach Quiche and Whole Wheat Bread:

1. Follow the instructions here to make Easy Whole Wheat bread in a bread machine. (Note: I always double the recipe and make two loaves.)

2. While the dough is in the bread machine, mix the eggs and milk in a large bowl.

3. Mix the chopped spinach with the meat, spices, and any other ingredients you like (like grated cheese). Pour into a greased 9×13 pan and refrigerate until ready to bake.

4. When the dough cycle is complete, transfer the dough to a greased loaf pan (or two pans of bread, if you double the recipe). Let rise for 30 minutes, as written in the recipe.

5. Preheat the oven to 350 degrees. (Note: If you let your dough rise in the oven, be sure to remove the pans before preheating the oven… not that I’ve ever made this mistake, of course!)

6. Remove the quiche from the fridge and bake for 40 minutes in the preheated oven, or until set. 10 minutes after putting the quiche in the oven, stick the bread in the oven and bake for 30 minutes.

Instructions

  • Add all the bread ingredients to the bread machine, in the order listed, or in the order recommended by your bread machine model.

  • Start the dough cycle.

  • Combine chopped spinach with deli meat, spices, and any other toppings of your choice (such as shredded cheese).

  • Pour the mixture into a greased 9×13 pan and refrigerate until ready to bake.

  • Remove the quiche from the fridge and bake for 40 minutes in the preheated oven, or until set. 10 minutes after putting the quiche in the oven, stick the bread in the oven again and bake for 30 minutes (I recommend that you cover the bread with foil after 15 min. to prevent overheating).

  • Let the bread sit for 10 minutes after coming out of the oven, then remove the bread from the pan and cool on a wire rack.
