I can’t even call this a “recipe” — it’s just a throwback dinner inspired by my whole family’s favorite breakfast! It’s versatile and can easily be changed depending on what bread you can find in the clearance cart at the back of your local Walmart! I’ve used bagels, ciabatta, rolls, and English muffins, and they all taste great!

Tonight I served sandwiches with grapefruit and green beans, but again, the side possibilities are endless. This entire meal, including the sides, can be finished in less than 30 minutes, making this a go-to dinner in our house.

Dinner menu for breakfast sandwiches:

The ingredients placed on the wooden surface include a package of bacon, six eggs, three grapes, two cans of sliced ​​green beans, butter, a package of cheddar cheese slices, and a bag of ciaabatta sandwich rolls.

Ingredients for breakfast sandwiches:

  • 6 ciabatta rolls (or bagels, or other bread) (Walmart Cart Discount – $1 for 1 of 12 bags) — $0.50
  • 4 tablespoons of butter (Aldi – $3.39 per 1lb)cost 0.42 $
  • 1 package of bacon (Aldi – $4.49 for 1lb)— $2.99
  • 6-oz shredded cheese (Aldi – $1.49 for 8 oz.) — $1.12
  • 6 eggs (Aldi – $1.96 for 1 dozen) $0.98
  • 3 grapefruit (Aldi – $3.99 for 5lbs) – $1
  • 2 cans green beans (Aldi – $0.50 for 1 can) -$1
  • salt and pepper to taste

Total for the entire dinner (Serves 6): $8.01

How to make homemade sandwiches:

1. Fry the bacon in an electric pan until done. Place the cooked bacon on paper towels to drain the grease.

2. In the same pan, add the eggs and fry them in the remaining bacon grease until cooked to your liking. Remove from skillet to a paper towel.

3. Cut the ciabatta in half and butter each half. Place on a cookie sheet and bake in the oven until lightly browned. As soon as you take the rolls out of the oven, put the cheese slices on the half of the hot rolls (you can also add the cheese slices at the last minute or while boiling).

Halved ciabatta rolls are arranged on a baking sheet cut sides up, each spread with a layer of butter.

4. Prepare any sides you use with the sandwiches.
