Kielbasa Sheet Pan Dinner ($10 Family Dinner Idea)

This recipe was inspired by an amazing deal I found on kielbasa this week at Publix! But deal or no deal, who doesn’t love a good sheet pan dinner? You really can’t go wrong here. All your meals can be catered to your family’s preferences while minimizing the clean-up of the kitchen afterwards. That is overcome all around!
I love using potatoes in casseroles because they are an economical way to fill the hungry youngsters in my house. I threw in broccoli, onions, and garlic for this, but you can use any vegetables you like and might have on hand.
I paired this Kielbasa Sheet Pan Dinner with homemade whole wheat french bread because we are trying to eat more whole grains. (instead of filtered characters) to deal with some health problems in our family (and let’s be real – store bought whole wheat bread is usually not that good). However, if you are short on time or don’t like to bake, I would recommend hitting up the discount bread cart at Walmart. (usually not in the bakery but in the back of the shop) where you can get French bread for well under a dollar a loaf!

Kielbasa Sheet Pan Dinner Menu:
Ingredients for Kielbasa Sheet Pan Dinner and Homemade French Bread:
- 2 packages Eckrich Sausage (Publix) — $2.60
- 6-8 potatoes (Aldi – $3.99 for 10lbs) – $1.33
- 1 package of broccoli crowns (any vegetable of your choice) (Aldi) – $2.34
- 3 cloves garlic, minced (Aldi – $1.75 for 3-ct package) – $0.18
- 1 onion (Aldi – $2.09 for 2 kilos) – $0.30
- Garlic salt, to taste
- 5 1/2 cups flour (I used white and whole wheat mix – Lidl) – $0.68
- 2 cups of warm water
- 2 1/2 tablespoons of sugar
- 2 1/2 teaspoons of salt
- 1 tablespoon instant active yeast (Sams – $6.88 for 2 pounds) – $0.08
- Olive oil for drinking
Dinner Total: $7.51 (Serves 6-8+)
How to Make a Kielbasa Sheet Pan Dinner with Homemade French Bread:
1. Follow the directions here to make Homemade French Bread. I used a combination of whole wheat and white flour.
The loaves are preparing to rise
To keep things simple, I always use instant yeast and skip the yeast proofing process. I just put it all together (except I don’t add the full amount of flour at first – just a few cups’ worth) until well combined. Then I slowly add more flour until the dough comes together well.
2. While the dough is rising, preheat the oven to 400 degrees.
3. Wash and peel the potatoes. Cut into pieces.
4. Clean the onion and cut into pieces.
5. Line two baking sheets with parchment paper and spread the potatoes, onions and garlic evenly on the pans. Drizzle with olive oil and sprinkle with garlic salt.
6. Bake for 20 minutes. While the potatoes are baking, continue with the instructions here for making homemade French bread.
7. Cut the sausage into pieces. Wash the broccoli and cut into bite-sized florets.
8. Remove the pans from the oven and add the sausage and broccoli. Mix and drizzle with more olive oil and add more garlic salt to taste.
9. Bake for another 20 minutes or until starting to brown. Remove from the oven and serve with buttered French bread.

This sheet pan dinner combines kielbasa, potatoes, and your favorite vegetables all roasted together in one pan – less prep, less cleanup! Potatoes make it delicious and budget-friendly, while the veggie mix is completely flexible based on what you have on hand. Pair with whole-wheat crusty French bread for a complete, satisfying meal the whole family will love.

Whole Wheat French Bread Ingredients
- 5 1/2 cups flour I used a white and whole wheat mix – Lidl – $0.68
- 2 cups warm water
- 2 1/2 teaspoons sugar
- 2 1/2 teaspoons salt
- 1 A spoon active instant yeast Sam’s – $6.88 for 2 kilos — $0.08
Instructions

In a large bowl or stand mixer with a paddle attachment, combine the warm water, yeast, sugar, salt, and two cups of flour. Mix by hand or on medium-low speed.

Mix in the remaining flour, 1/2 cup at a time until the dough is smooth but not sticky. (The exact amount you use will depend on your climate, but usually equals 5 cups).

Brush the dough ball with olive oil and cover the bowl with a tea towel to rest for 15-30 minutes, or up to 1 hour.

Divide the dough in half. On a well-floured counter, roll out half of the dough into a 15-inch rectangle. Then, starting from the long side, you roll the dough into a cylinder. Pinch the seams closed, tuck the ends under, and place your bread on the baking sheet. Round the edges and cut three diagonals in the top of the bread.

Repeat this process with the second half of the dough.

Cover the loaves lightly with a tea towel and let them rise for 30-60 minutes (or longer if you have time!).

Preheat the oven to 400 degrees.

While the dough is rising and the oven is preheating, wash and scrub the potatoes. Cut them into pieces. Clean the onion and cut into pieces.

Line two baking sheets with parchment paper and spread the potatoes, onions and garlic evenly on the pans. Drizzle with olive oil and sprinkle with garlic salt.

Bake for 20 minutes. While the potatoes are baking, cut the soup into slices. Wash the broccoli and cut into bite-sized florets.

Remove the pans from the oven and add the sausage and broccoli. Mix and drizzle with more olive oil and add more garlic salt to taste.

Return the kielbasa pans to the oven and add the baking sheet with the loaves of bread to the oven. Bake both for about 20 minutes, or until the vegetables begin to brown and the tops of the bread are golden brown. The loaves should sound hollow when you knock on them, when they are done.
